Hospitality industry standout, Manfred Lassahn is the executive chef of the Hyatt Regency Huntington Beach Resort & Spa and the mastermind behind Watertable, named to Open Table’s Diner’s Choice Top 100 Restaurants in North America. Watertable, the resort’s signature restaurant that opened in Spring 2014 has been featured in USA Today, ABC-7, CBSLocal, Orange Coast, Coast, Modern Luxury, the LA Times, and the Orange County Register Magazine. As a visionary putting a new, creative spin on American-style cuisine, Chef Lassahn continues to evolve the dining concepts throughout the resort with his innovation and passion. Throughout his career, Chef Lassahn has served as executive chef at various high-profile Hyatt properties including the Hyatt Regency Century Plaza, where he was recognized as Hyatt Hotels’ Chef of the Year.
Adrian joined Hyatt Regency Huntington Beach in 2008 as a Culinary Supervisor and was part of Watertable’s opening team. In 2017 he was promoted to Chef de Cuisine at Watertable and is responsible for creating its seasonal menus and representing Watertable at such events as Newport Beach Food + Wine and Modern Luxury’s Live and Dine event. Adrian attended the Art Institute of California.
Branden brings an impressive background in Southern California hospitality with mastery of directing elevated resort dining outlets and restaurant operations to his role. An experienced leader in the F&B industry with extensive wine knowledge, Mr. Bidwell oversees all operations for WATERTABLE including food quality, customer care and staff hiring and training.
